Food Day Canada Win
Whistler BC – Derek Bendig, Executive Sous Chef at Fairmont Chateau Whistler, has received his fourth Gold Good Food Innovation Award for his Food Day Canada menu – a highlight from the annual event which took place on August 6, 2019. The award recognizes Canadian culinary talent with a passion for creativity, sustainability, and innovative menus inspired by Canadian ingredients.
Bendig turned to Whistler’s backyard for inspiration for his 2019 Food Day Canada menu. Albeit, he did not need to go far. With the exception of proteins, every ingredient was sourced from the Whistler Farmer’s Market which runs every Sunday from May to September on the sidewalks parallel to the hotel. Market vendors bring the freshest produce and ingredients from the Pemberton/Sea to Sky area. Guests at the Food day Canada dinner were also treated to a portfolio of wines from Penticton’s Roche Wines, a winery dedicated to natural, artisanal farming and winemaking.
Food and wine connoisseurs will recognize Chef Bendig’s name from his appearance at the prestigious James Beard House in New York City. Bendig earned the right to represent Canada there after being award another gold medal from Food Day Canada’s 2016 event.
