Fairmonts 2019 Food Day Canada Menu Released

Whistler, BC – In June, Fairmont Chateau Whistler executive sous chef Derek Bendig announced that his 2019 Food Day Canada (FDC) dinner will be comprised entirely of ingredients from the Whistler Farmer’s Market, located just steps from the hotel’s front doors. Today chef Bendig released the complete menu ahead of the August 3, 2019 dinner.

The Whistler Farmer’s Market welcomes local farmers, purveyors, artisans, bakers, and entrepreneurs twice-weekly. From Lillooet’s Spray Creek to Squamish’s Spark Kombucha, the local product of countless market partners will be showcased on the seven-course menu under the creative cookery of Chef Bendig.

*N’Quatqua Rainbow Trout

  • romanesco, radish, peas, turnip, rooftop nasturtium, smoked trout velouté

Rainshadow Collective Padron Peppers

  • stuffed with Golden Ears Neufchatel, Salt Spring island herb salt, fried zucchini blossoms

Spray Creek Ranch Pork

  • stuffed trotter with green pea pureé, guanciale wrapped pork loin with horseradish turnip pureé, cabbage wrapped crepinette with carrot and rooftop honey pureé

Alpine Fireweed & Rhubarb-Spruce Tip Granité

  • Pemberton Distillery Elderflower Liqueur

Spray Creek Ranch Pasture Raised Chicken

  • chicken breast sous vide, leg meat, offal, Pemberton potato ragu, crisp skin, poached egg

Spray Creek Rose Veal Chuck

  • cooked 24 hours, kale and morel mushroom cream, Madeira jus, kale chip

Cherry On The ‘Honey’ Cake

  • Goldstrike honey, AIG summerland cherries, Bowen Island herb smoked salt, powdered raspberries ginger-berry kombucha pearls

Like last year, each course will paired with wine from Penticton’s Roche Wines, which is dedicated to natural, artisanal farming and winemaking.

The 2019 Food Day Canada event at Fairmont Chateau Whistler will take place on Saturday, August 3 at 6:00 p.m. at The Wildflower. Tickets are already on sale and selling fast. Priced at CAD $149 plus administration fees, they can be purchased online at Eventbrite.

*The only product not currently available at the Whistler Farmer’s Market is N’Quatqua Rainbow Trout.
